It's easy to learn how to make scrambled eggs that are perfectly light and fluffy. You just need to use the right ingredients and know a few tricks.
I'm Stephanie Gallagher, the Iron Chef Mom, and today I'll show you how to make perfect scrambled eggs.
For this recipe, you will need:
2 large eggs per person
1 Tbsp. butter
1/2 cup shredded cheese (I'm using a cheddar-Monterey Jack blend)
Crack the eggs into a medium bowl. Add some salt and pepper.
Whisk them together vigorously. You want to beat some air into the eggs.
Melt the butter in a nonstick skillet over medium-low heat. I happen to have a large skillet, so I'm going to use the whole tablespoon of butter, but you can use less if you have a smaller skillet.
Now pour the eggs into the skillet, and begin stirring them gently with a nonstick spatula or a wooden spoon. You want to kind of stir and fold the eggs, gently, so they form soft curds. You don't want to beat the eggs into submission.
As the curds form, keep bringing the raw egg to the center of the pan where it's hottest.
OK, when the eggs are almost done, add the cheese, and gently fold it into the eggs just until it starts to melt. Turn off the heat. Garnish with fresh cracked pepper. And here are your light and fluffy scrambled eggs.
